Service provider recs - switching from Atlantic - considering AWS

Hoping someone can provider recs on service provider that is not Atlantic. We have had so many issues and are looking for a new home. I've looked at AWS EC2 and not really sure what the difference is between Shared Instances, Dedicated Instances and Dedicated Hosts...even after googling. I know dedicated means we aren't sharing with someone but can't quite discern what the difference is between Instances and Hosts. Hoping someone here speaks "server" better than I can. We know we want no less than 16 GB of RAM and would prefer a place with great customer service. TIA for any input!
