I need to locate the player chat log for a particular day, because apparently some players made an agreement about a chop and now they aren't agreeing over the agreement. Where would I find those logs?

If the chat was on the table, it will be in the hand history file for that table. Those are in the HandHistory folder inside your data folder. Lobby chat is recorded in the Logs folder.
