I want to pay this guy to do some coding for me, adding a hiscores etc. but how can I limit his access on the Admin pannel? He says he needs access to my web server, and the admin pannel to add these features.

He should be able to use the trial version to develop the code on his own machine and then hand it over to you with instructions to install it yourself.
