Hey, we currently run the poker client on a VPS and people playing are experiencing a lot of "lagg" with delays between actions and the game freezing temporarily. We notice this happens when our tournaments are ran and about 10-15 seats are being occupied in total on all of our tables. When fewer people are playing the lagg is barely noticeable except to a small percent of players on the site.

Currently the specs for our VPS are:

CPU: 2500MHZ
Memory: 2.5GB
Disk Space: 150GB RAID
Bandwidth: 2000GB/MONTH

What do you think is causing the lagg and would having something like a dedicated server noticeably reduce lagg? Any tips on how to potentially reduce the lagg is appreciated.

Any decent setup should be able to handle 15 players at once. Check your actual upload/download speed at http://www.speedtest.net or similar sites. You'll likely need to install flash on your VPS first. I've got customers handling 400+ players but they are using high-end dedicated servers with 1Gbps connections. You shouldn't need anything like that for 15 players, however. The problem with a VPS is that the hardware is being shared by other accounts. What does the CPU load look like in the Windows Task Manager at the time you are noticing the lag?
